My 16-year-old comes home from school looking for an after school snack. I love this recipe because it’s quick, easy, and can be prepared ahead of time. Not only that, but my mom used to make these for my sisters and I, too!
Butterscotch Cornflake No-Bake Cookies
1 bag butterscotch morsels
1/4 cup peanut butter
4 cups corn flakes (frosted or plain)
Melt butterscotch morsels and peanut butter together in microwave or on stove top (stir constantly on stove top or use a double boiler pan). Add corn flakes and stir until coated well.
Cover cookie sheet with wax paper or parchment paper (foil would probably work in a pinch). Drop by spoonful onto covered cookie sheet. Put in refrigerator until hardened…about 10 minutes (if I’m in a hurry, I put them in the freezer for 5 minutes!)

The quickest and easiest snack I give my kids is good ol’ microwave popcorn. Even the youngest one can do this! (I am, by the way, going to try your cookies today. I have chocolate chips, think that will work??)
I’ve never used chocolate chips, but I don’t see why that wouldn’t work! Let me know how they are. I love anything with chocolate and peanut butter!
I would love to win the book; I could really stand to lose my mom guilt. My snack idea is simple, but diverse… we always have whole wheat or veggie tortillas in our fridge. Sometimes they become super fast quesadillas with melted cheese and chicken from the microwave… sometimes they just get a slab of peanut butter or cream cheese with some raisins… or really whatever we just have around the pantry and fridge (tacos fixings, eggs and sausage, lil’ pizzas, etc.) The reason we use them so much is because they can be wrapped and nuked for snacks and lunches and they aren’t messy for our little guys.

The snack my kids like is either saltines with frosting on it (don’t knock it until you try it! ) or pretzels dipped in frosting. Something about the whole salty/sweet just makes it hit the spot after school. 🙂
We’ve done graham crackers with frosting, but not saltines with frosting. I bet the sweet/salty thing is good!
Our boys love having bananas and applesauce for a snack. They also love microwave popcorn.
I just made “muddy buddies” (we always called it Puppy Chow) on Saturday for the Super Bowl on Sunday.
1/2 c peanut butter
9 cups of Rice, Wheat, or Corn chex cereal
1 c chocolate chips (I used little Hershey chocolate bars as I had run out of chocolate chips)
2 TB butter
Melt the three above ingredients together on stovetop or microwave. Takes about five minutes either way. Pour over and coat Chex cereal in a bowl. Sprinkle with powdered sugar. Put on lid and shake until covered. Let cool and eat or eat right away.
My son took some leftovers to school on Monday and I was declared “AWESOME” by seventh graders. I took that as a huge compliment. 🙂 I think the clean up took longer than the actual recipe.
We love puppy chow at our house! When the kids were little they fought over who would shake the bowl!
I usually make a big batch of granola and freeze part of it. That way I can just pull some out for a snack. I will also do that with cookie dough. I’ll make up a batch and freeze the dough in cookie size balls. Pull them out of the freezer and 10 mins later, yummy, homemade cookies!
I use apples sliced and then make ants on a log with apples (the boys aren’t celery eaters) Spread peanutbutter along the edge and then add raisins and/or chocolate chips.
We love “Peanut Butter Playdough”. Combine 4T. of peanut butter with 4T. of honey. Add enough powdered milk to make the mixture non-sticky. My kids make all kinds of shapes and then eat them. Yummy!
I love to bake so it’s tough to choose just one, but this recipe is no-bake and delicious!
Peanut Butter Bars
1 pkg. graham crackers, crushed
1 c. peanut butter
1 c. butter, melted
3 c. powdered sugar
1 pkg. chocolate chips
Mix together 1st 4 ingredients. Press into a pan (the smaller the pan, the thicker the bar). Melt chocolate chips and spread on top. Cool. Voila!
Our special snack treat is popcorn on the stove. Brings back great memories of my Dad making it and tossing into a brown paper bag for our trips to the drive-in movies. Its pretty quick too. I would like to try the puppy chow and the cornflake cookies with chocolate instead of butterscotch. Our quick snack is cheese sticks or a piece of fresh fruit. Raw veggies and dressing are anothe favorite.
Toast a whole grain frozen waffle until crispy.
Spread with peanut butter (I like crunchy!)
Sprinkle with chocolate chips.
Nutritious while still a treat:)
I have named this snack “The Perfect Storm”. It’s the perfect combo of sweet & salty! Everyone raves over it!
2 small bags of bugles (7.5 ox) or 1 large bag
1/2 package of white almond bark (6 squares)
3 squares chocolate almond bark.
Dump bugles into a large bowl. Melt white almond bark and stir into bugles to lightly coat. Line 2 cookie sheets with waxed paper and spread out bugles. Melt chocolate almond bark & drizzle over bugles. I put in a Ziploc after melted and snip the corner. Let dry and break apart. YUMMY!
Their favorite snacks are tiny items that they can put together. The bit sized cheddar rice cakes spread with whipped cream cheese or salami spread with cream cheese and rolled up. My daughter doesn’t like cream cheese so she rolls a carrot up in salami. I’ve done the ham slice with cream cheese and a pickle rolled up and cut into slices before too. Although, a again my daughter doesn’t like pickles or cream cheese. I think I made her a picky eater, since she was the oldest and I didn’t want her to get messy! You learn by the 4th child!
Rice cakes with peanut butter or nutella or both!
Our fast, easy (somewhat healthy) snack is Strawberry Fluff with fresh fruit.
Mix together one 8 oz container Kraft cream cheese with one 7 oz container Marshmallow Creme until blended well. Cover and refrigerate.
Serve with fresh fruit ~ we like strawberries, sliced apples and pears best!
I put Scoops Tortilla chips on a paper plate and sprinkle cheese in each scoop. I melt in micro. for a minute and then top with store-bought or better yet, homemade guacamole. Everyone raves about having these fast little bites.

We do just the chips and cheese part. My boys love them! I love guacamole but I’m the only one in my family!
